1 cup salted butter
1 cup sugar
1/2 cup light corn syrup
2 tablespoons molasses
1 tablespoon pumpkin pie spice
1 teaspoon pure vanilla extract
1/4 teaspoon baking soda
3/4 cup chopped pecans, optional
1 1/2 cups chocolate

Procedure

Preheat the oven to 180°C. Line two large baking trays with parchment paper or apply butter; set aside.

Now in a bowl pour popped popcorn. In a saucepan over medium-high flame, put together butter, brown sugar, corn syrup, molasses, and pumpkin pie spice mix and combine well.

Boil the prepared mixture and let it cook for 4 more minutes without stirring.

Remove pan from flame and add vanilla essence and baking soda. Immediately pour the prepared caramel sauce over the popcorn and stir to evenly coat the popcorn. Add pecans or almonds at the top.

Pour the prepared caramel corn onto a prepared baking tray and lay it into an even layer using a spatula.

Bake this in a preheated oven for 30 minutes, stirring every 10 minutes.

Allow caramel corn to cool completely. Melt chocolate candy and drizzle over cooled caramel corn.
