Chicken and vegetables cooked in a sauce combo worked great with the mixing of rice. Here is an easy and most popular Indo-Chinese style fried rice recipe to make at home. The recipe is loaded with plenty of chicken and veggies and an easy recipe to prepare on a hectic day as well.
Now in a pan heat 2 tbsp of ghee. Saute ginger-garlic for a minute or until the aroma is all out. Add to it onion, bell pepper, and salt. Saute the mix until the mixture becomes soft and the veggies are semi-cooked.
Add carrot and beans. Add powdered tastemaker cubes or fried rice masala and saute well to well combine.
Shred the previously cooked chicken. Once veggies are cooked in the pan, add chicken along with the stock and mix well to combine it.
Add soy sauce and chilli tomato sauce to the mix and combine again. Add salt as per requirement. Saute it well for more than 5-6 minutes
Prepare rice – Wash and drain the rice very properly. Heat 2 tbsp ghee in a cooker and add the rice. Saute the rice until it’s crispy. Add extra ghee if required.
Add 3 3/4 cup water, lemon juice, salt, and pepper to the rice. Cook this rice until it’s done for 15 – 20 minutes.
Drain the rice and mix it with the prepared chicken gravy. Cover and cook the mixture for 5 minutes for the flavors to get mixed with everything.
Garnish rice and serve with fried cashew, raisins, and chopped green onions. You can serve this rice with side dishes such as Chilli chicken.
