Kepsa gets its name from Kabsa, the traditional dish straight from Saudi Arabia.
It is known as Mandi locally in Yemen, and Gouzi in the UAE. This is an amazing dish with chicken and rice cooked differently and then layered in a dish. It is similar to biryani but not exactly biryani. It is well-known as Chicken Kepsa biryani, basically a fusion of biryani and kepsa. The amazingly cooked rice and the indo-western style chicken that is prepared is amazing. Let’s have a look at the delicious recipe-

Ingredients required-
500 grams chicken drumsticks
2 tbsp Dahi
2 tbsp tandoori chicken masala
2 tbsp Kashmiri Lal Mirchi
to taste Salt
2 green capsicum cube-sized chopped
1 red capsicum cube-sized chopped
4 onion barista
1 Hand full of French fries
5 cup half cooked basmati rice
1 Cup schezwan sauce
2 tbsp red chili sauce
2 tbsp green chili sauce
1 tbsp soya sauce
1/2 cup oil
1 Handful chopped green onions

Procedure-
Preparation of chicken drumsticks and sauce. Marinate chicken drumsticks with Dahi roasted masala Kashmiri Mirchi marinate for 2 to 3 hours in oil and profoundly fry chicken.

Let it cook on medium flame.

For making the sauce in a pan, shallow fry onions and capsicum.

Once veggies are cooked, add all sauces and fry them until well combined, and then add the chicken pieces to it.

The groundwork for rice in a pan adds oil, red dry bean stew adds capsicum and fry till oil parts add schezwan and pureed tomatoes.

Mix it, add barista lastly, add rice, add some water, mix it appropriately and cook it. Add koala flavor to both dishes.

Finally assemble on a plate, decorate sides with carrot and cucumber, add rice in the middle, top it with gravy and chicken. End it by garnishing with green onions and French fries.
