Let’s find out the process to make Mutton Biryani in instant pot
2 sliced onion, ½ kg mutton, 1tbps ginger, garlic paste, Salt to taste, Biryani masala, 3 Green chillis,¼ tsp Turmeric powder, 100ml, yogurt, 1 tsp chili powder, 2cups of basmati rice, Pinch of saffron, Milk, 5-6 cups of water, 4 cloves, 2 cinnamon stick, 3 cardamoms, Few mint leaves, Ghee, Oil
Take sliced onion and deep fry it until golden brown. Take another bowl add mutton, ginger garlic paste, salt, 2 tbsp Biryani masala, 3 green chilies, 2 tbsp chopped mint leaves, ¼ tsp turmeric powder, yogurt and fried onion. Mix well. Add 1tsp chili powder. Again mix well and marinate for at least 1 hr.
Soak basmati rice for 30 mins. Soak pinch of saffron in 2tbsp milk.
In saucepan take water, add cloves, cinnamon stick, cardamom, few mint leaves and salt for rice. Keep on heat until boils. Add soaked rice, cook the rice for about 5 mins. Rice should be 60% done.
Add 2 tbsp ghee in instant pot add 2tbsp oil. Add marinated mutton. Keep on sauté mode for 8-10 mins. Add ¼ cup water, half saffron milk, hand full mint and coriander leaves. Switch off the instant pot. Layer it with rice and put remaining fried onions. Add remaining saffron milk. Add 1tbsp ghee, ¼ tsp Biryani masala. Close the lid. Keep on slow cook mode set it 50 mins. After 50 mins wait few more mins to open the lid. Mix gently. It’s ready to be served.
