Among all street and restaurant food, misal is among the most preferred recipes. Misal is a hearty dish and one of the simple dishes. It’s hot to tangy flavor and almost like a meal prep food. This is 100-year-old street food and you will find a lot of varieties of misal in India. Even lots of well-known restaurants are also serving misal. Among all varieties of misal, here we look at the matki misal recipe for this festive season.

INGREDIENTS.
* Sprouted matki, ginger, garlic.
* One finely chopped onion, grated coconut, chili powder, tomato, and misal masala.

PROCESS.
* Sprout matki well in advance by soaking it in water for 8 hours and then sprouting in muslin cloth.
* Crush garlic cloves, ginger, and little coconut in a grinder and keep it aside. Also, keep chopped onion and tomato ready.
* Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Saute and add hing in it.
* Add chopped onions and continue to saute them until transparent.
* Add crushed garlic, ginger, and coconut.
* Saute it for a few minutes until aromatic.
* Add tomato and salt and saute until tomato softens.
* Add turmeric powder, chili powder, and misal masala. Adjust spice level by adding chili powder and misal masala.
* Saute for 2 minutes on low flame and after that add coriander leaves and saute it.
* At this stage add sprouted matki and required water for a curry. Adjust water and spice properly.
* Now boil the mixture and add jaggery to it.
* After a few minutes sprout will turn tender and adjust the taste by adding salt or masala but not red chili powder.
* You will see oil floating on top. At this stage put off heat. Your matki misal is ready. You can have it with farsan or with pav.
