Crispy fried chicken
Ingredients:- 4 cups all-purpose flour, 2 tablespoons garlic salt, 1 tablespoon paprika, 3 teaspoons pepper, 2½ teaspoons poultry seasoning, 2 large eggs, 1½cups water, 1 teaspoon salt, 2 broiler/fryer chickens (3½ to 4 pounds each), Oil for deep-fat frying.
1. Take a large shallow dish, mix 2⅔ cups flour, 2 tablespoons garlic salt, 1 tablespoon paprika, 2½ teaspoons pepper and 2½ teaspoons poultry seasoning together. Take one more shallow dish, beat eggs and 1½ cups water now add 1 tsp salt and the remaining 1½ cup flour and teaspoon pepper.
2. Dip chicken in egg mixture and flour mixture simultaneously, a few pieces at a time. Turn to coat.
3. Take a deep-fat fryer, heat oil to 375°. Fry chicken, put some pieces together, until golden brown and a thermometer inserted into chicken reads 165°, for 7-8 minutes on each side. Drain on paper towels.
