Christmas is knocking and if you haven’t made any plans what to make on a festive day, then this delicious cake could be your destiny!

Ingredients
currants
golden raisins/sultanas
raisins
mixed candied peel (finely chopped)
cup glace (candied) cherries (halved)
all-purpose flour
salt
mixed spice
ground cinnamon
freshly ground nutmeg
butter (slightly softened)
soft brown sugar
lemon (zested)
large eggs (lightly beaten)
tablespoons brandy (plus extra for feeding)
(Note: the measurements would vary with the size)

How to Make it:
1. Get all ingredients that are mentioned above
2. Keep your oven heated at 300
3. Use butter paper as a base in the pan, so that the heat doesn’t burn your cake
4. Combine the currants, sultanas, raisins, candied peel, and cherries with the flour, salt, and spices in a big bowl, as needed.
5. Then in a bowl, cream the butter with the sugar until light and fluffy. Stir in the lemon zest. Add the beaten egg to the butter mixture.
6. Mix the two mixtures with each other.
7. Pour the mixture into the tin and smooth the top out.
8. Bake it!
